Spicy Mussels with White Wine
An easy delicious way to prepare mussels. Serve with a nice crusty bread to sop up all the juices.

You will need:
- 1/3 cup Olive Oil
- 1/2 Onion, thinly sliced
- 4 large cloves Garlic, chopped
- 1 Tablespoon #107 Calypso Salt-Free seasoning
- 1 cup Dry White Wine (Chablis)
- 2 Lemons, seeded and sliced
- 2-1/2 pounds Mussels, fresh
- 1/2 cup chopped Fresh Italian Parsley
Cooking Instrutions:
Heat oil in large pot over medium-high heat. Add onion, garlic sauté until onion is light brown, about 5 minutes. Add #107 Calypso Salt-Free seasoning. Cook about 30 seconds. Add wine, lemon slices and 1/4 cup parsley; bring to boil. Add mussels. Cover pot and cook until mussel shells open, stirring once to rearrange mussels, about 6 minutes. Discard any mussels that do not open. Using slotted spoon, transfer mussels to large, warm shallow bowl. Boil broth in pot until reduced to 1 cup, about 3 minutes. Pour broth over mussels. Sprinkle remaining parsley over top.
